Why Choose This Knife?
Professional-Grade Steel (AEB-L)
Originally developed by Bohler-Uddeholm for razor blades, AEB-L steel is highly prized by custom knife makers. It offers incredible rust resistance and exceptional toughness that prevents the edge from chipping, even though it is ground very thin. It takes a fine edge, stays sharp for a long time, and is remarkably easy to sharpen when the time comes.
Exceptional Edge Retention (62+ HRC)
We heat-treat this blade to a high hardness level of 62+ HRC. This gives you a high-performance edge that stays razor-sharp through heavy dicing, slicing, and skinning, providing a very thin, high-performance edge without sacrificing the steel's structural integrity.
Weather-Resistant, Ergonomic Handle
The handle pairs the dramatic, dark grain of durable ziricote wood with custom copper spacers. By hand-sanding everything to an ultra-fine 1000-grit, we close up the grain for easier polishing and maintenance. This drastically reduces the chance of water or food juices soaking into the wood, making it highly durable.
Note: We also offer a matching Japanese-style kitchen knife if you would like to pair it with a custom set! Please contact us for availability.
